Ollia Macarons & Tea is a French macaron shop on 16th Avenue SW in Calgary's Mount Royal Village, near the 17th Ave corridor. Owners David and Lindsay Rousseau have been making gluten-free macarons here since 2014 — 20-plus signature flavors including pistachio, whisky chocolate, lavender and honey, and blue cheese with pear and pecan. The shop also carries its own organic loose-leaf tea line, candles, and gifts. David appeared on Food Network's Wall of Bakers. The shop runs macaron baking classes and wine-and-macaron pairing events. Ollia has produced limited-edition Pride macarons and publicly supports LGBTQ+ causes.
